This flaky pastry layered with nuts and drenched in syrup boasts a rich history that is intertwined together cultures and continents.  The earliest mentions of baklava-like desserts trace back to the Assyrian Empire around 8th century BC. They used honey and nuts to fill flatbreads. Fast forward to the Roman Empire, a similar dessert emerged. This version incorporated cheese along with nuts and honey. The dessert we know today truly became Baklava under the Ottoman Empire (13th-20th centuries).  They refined the recipe using layers of phyllo dough, a paper-thin pastry, and replaced cheese with a focus on nuts like pistachios and walnuts. Honey left to go to syrup made with sugar. Over time, Baklava spread throughout the Middle East and into Eastern Europe, with variations emerging in different regions. From Greece to Turkey to Armenia, each place has its own unique take on this beloved dessert. At the end of the day it is truly a tasty part of history.
